Finding the best threshold

According to the following post How to fill the gaps in letters after Canny edge detection

I have used the method for using a threshold for each channel, but I don't know methods for finding the best threshold. You can forget the lighting conditions or anything else like blurry image.

Is there algorithms for finding the best suited threshold ?
